It is always said to identify good quality vermicelli by its color, texture, and aroma. Good quality vermicelli should be white or slightly yellow in color, have a smooth, even texture, and a pleasant aroma. It should not be too brittle or too soft. But now with the development of additive and chemicals, such as formaldehyde sodium bisulfite （a carcinogen), ammonia, benzoyl peroxide, it is quite easier to make it with low prices. Especially the prices depend much on the percentage of corn starch, whose price is about 1/10 of mung bean starch. Just image how to make the corn starch whiten.
